Menu Plan Monday: March 4-10

It’s another Monday and that means time for another menu plan.

Recap

Our plan was thrown off a bit because I didn’t know ahead of time which nights my son and his girlfriend visiting from Florida would be dining with us or one of the other sets of parents.

It was no problem other than eating out THREE times in one week. I’ll make up for it this week.

Monday: Pork Chops, Baked Potato, broccoli

This meal went as planned except we had green beans instead of broccoli.

Tuesday: Shrimp Fajitas, flour tortillas and green salad

The shrimp fajitas were so good, we decided to forgo the salad and fill up on the shrimp!  Don’t worry I had enough veggies during the day.

Wednesday: Steak, cous-cous, zucchini

We swapped Wednesday and Thursday night and ate out.  I had chicken and dumplings with green salad and mixed vegetables.

Thursday:  OPEN

This meal other than being a night late went as planned.  Sauteing the zucchini and then simmering in a little balsamic vinegar really made it tasty.

Friday:  Grilled chicken, tater tots, green beans

My son was in town and selected meat loaf for dinner.  We had it with fried potatoes and broccoli.  Hmm, I wonder if I picked the yellow dinner plate all week?

Saturday: Dinner out

Mexican was the cuisine of choice.  I had two chicken taquitos and one carnitas taco with sauteed vegetables. I like that this restaurant offers the vegetables instead of rice and beans.

Sunday: Meatloaf, brown rice, corn

Since my son’s girlfriend eats 95% vegetarian we decided to eat out at Souplantation.  They have vegan and vegetarian soups, salad and bread.

Meal Plan

This week is going to be light on meal planning because I’m trying out a new meal service which you’ll be hearing about in the near future.

Monday: Home made chili, cornbread

Tuesday: Kale and bean soup

Wednesday: Roasted Chicken, tater tots, green beans

It was yummy and much easier to make than I thought. Just sautee the peppers and onions, then add the shrimp and some taco seasoning.

We never get down to the individual vegetable or side that we’re going to have. We typically have enough to choose from and know what will work that my wife can plan that the day of. The entree is the biggest thing that we plan and strive to keep.

Michael, I think the main course is the most important thing. I just write it down so I remember to have variety as well as the ingredients!
